Dried Tomato Pasta Sauce

Ingredients:


6 medium dried tomatoes -- cut into 1/8 inch strips

6 medium dried shiitake mushrooms

1 bunch green onions -- chopped

2 cloves garlic chopped

1/4 teaspoon crushed red pepper

1/4 teaspoon oregano -- optional
 

Preparation / Directions:


Reconstitute tomatoes (soak in cold water about 20 min), cut into 1/8" strips. Simply saute the red peppers for about 30 seconds, add the garlic, saute 30 sec more, add the tomatoes and mushrooms and saute for 1-2 minutes. Add the green onions and cook for another minute or two and season with salt and black pepper to taste before tossing with pasta. Great quick meal for summer!
