Ingredients:


2 large tomatoes -- chopped

2 tablespoons chopped red onion

1 1/2 teaspoons balsamic or red wine vinegar

1/2 teaspoon salt

1/4 teaspoon ground black pepper

8 ounces bow tie or other pasta -- cooked

3/4 cup wish-bone fat free chunky blue cheese dressing

2 tablespoons chopped fresh parsley -- (optional)
 

Preparation / Directions:


In bowl, combine tomatoes, red onion, vinegar, salt and pepper; refrigerate covered at least 1 hour. Stir in hot pasta, dressing and parsley. Serve at room temperature or chilled.
