Ingredients:


2 medium potato

3 large egg yolk

1/2 teaspoon salt

1 teaspoon sugar

2 teaspoons flour

1/2 teaspoon baking powder

3 large egg white
 

Preparation / Directions:


scrub potatoes well grate into a bowl, without peeling beat yolks until light and lemon colored add the potatoes, salt, sugar, flour, and baking powder-mix well beat whites to stiff peaks gently fold into potato mixture drop by spoonsful onto a greased griddle or skillet, to make 3-inch cakes fry until well browned on both sides keep warm in a 300 degree oven serve hot
