Potato Pancakes With Chilis And Lemon Grass

Ingredients:


1 pound potato

3 medium scallions

2 pieces lemon grass heart

2 teaspoons minced red chili peppers

4 cloves garlic

2 teaspoons lemon juice

1 teaspoon salt

2 tablespoons oil
 

Preparation / Directions:


1. in a bowl, combine potatoes, scallions, lemon grass hearts, minced red chili peppers, garlic, lemon juice and salt. 2. mix together well. 3. in a nonstick skillet, heat 2 tablespoons of oil on medium high heat. 4. divide potato mixture into 4 or 6 equal portions. 5. place each portion into skillet. 6. brown on both sides, turning only when the first side is thoroughly brown, adjusting heat so they won't burn. 7. when done, remove from pan and serve immediately or reserve and reheat when ready to eat. to reheat: preheat oven to 350[. place pancakes on a cookie sheet. place in oven for 10-15 minutes or until heated through. note: do not rinse potatoes after gratin
