Ingredients:


1 cup seasoned bread crumbs

1 teaspoon parsley

1 teaspoon chives

2 cups mashed potatoes

1/4 teaspoon salt

1/4 teaspoon pepper

2 large eggs

2 tablespoons corn oil
 

Preparation / Directions:


combine breadcrumbs, parsley, and chives, set aside season mashed potatoes to taste with salt and pepper divide into equal portions and form into two patties per portion dip into beaten eggs, allowing excess to drip off coat with crumb mixture place onto waxed paper and chill for 30 minutes to set coating heat oil to 375 degrees add cakes and fry until crispy on both sides drain on a cooling rack and blot with paper towels keep warm in a 300 degree oven serve hot
