PANCAKES WITH ORANGE SAUCE

Ingredients:


3/4 Cup whole wheat flour

1/4 Cup all purpose flour

1 1/2 teaspoon bake powder

3/4 Cup skim milk

1 tablespoons honey

1 teaspoon olive oil

2 large egg whites stiffly beaten
 

Preparation / Directions:


Combine flours , bake powder and salt, combine milk, honey and oil and add to the dry ingredients , stir till just moistened , fold in egg whites. Pam spray griddle or skillet . Pour about 1/4 c. batter onto the hot griddle. Cook till brown and bubbly turn over and cook a few mins more.Serve with orange sauce. Orange Sauce Combine 1 tbsp sugar and 1 tbsp cornstarch. 3 tbsp water and 3 tbsp orange juice concentrate. cook till thick and bubbly. cook for 2 more mins low heat. Stir in 1 11oz can mandarin orange sections drained and 1 tbsp chopped walnuts (if desired) Keep warm , you can adjust the amount of water to make a thick sauce if desired.
