Old-Fashioned Buttermilk Pancakes

Ingredients:


3 cups all purpose flour

2 1/2 teaspoons baking powder

5 1/2 teaspoons sugar

1 teaspoon salt

4 cups buttermilk

3 large eggs -- beaten to blend

3 tablespoons unsalted butter

1 spray nonstick vegetable cooking spray

2 tablespoons butter

1 cup maple syrup
 

Preparation / Directions:


Stir flour, baking powder, sugar and salt in large bowl to blend. Whisk buttermilk, eggs and 3 tablespoons unsalted butter in medium bowl. Add milk mixture to dry ingredients and stir well. Let stand 15 minutes. Preheat oven to 200 degrees. Heat griddle over medium heat. Spray with vegetable oil spray or brush lightly with melted butter. Pour batter by 1/4 cupfuls onto griddle. When bubbles on top of pancake begin to burst and bottom is golden brown, turn pancake over. Cook until golden brown. Transfer to platter; place platter in oven to keep warm. Repeat with remaining batter. Serve pancakes warm with butter and maple syrup. Variations: After step 1 stir in one of the following: 1/2 cup diced cooked . regular or less sodium bacon 1/4 cup . Granola 1/2 cup . Seville Orange Marmalade 1/2 cup .
