Ingredients:


1 cup seasoned breadcrumbs

1 teaspoon parsley

1 teaspoon chives

2 cups mashed potato

1/4 teaspoon salt

1/4 teaspoon ground white pepper

2 large egg

1 cup vegetable shortening
 

Preparation / Directions:


Combine breadcrumbs, parsley, and chives, set aside season mashed potatoes to taste with salt and pepper divide into 8 portions and form into patties dip into beaten eggs and coat with crumb mixture place onto waxed paper and chill for 30 minutes to set heat oil to 375 degrees add cakes and fry until crispy on both sides drain on paper towels keep warm in a 300 degree oven serve hot
