Crisp Potato Pancakes

Ingredients:


2 teaspoons lemon juice

4 cups water

2 cups potato

1/4 cup onion

2 teaspoons flour

1 large egg

1 teaspoon milk

1/8 teaspoon salt

1/8 teaspoon pepper

6 teaspoons butter
 

Preparation / Directions:


combine lemon juice and water in a large bowl add potatoes and stir to mix well, drain combine potatoes, onions, flour, egg, and milk-mix well season to taste with salt and pepper heat 2-3 tablespoons butter in a large skillet, over a medium flame drop 2 tablespoons batter for each pancake into skillet and spread into a 4-inch circle cook 3-4 pancakes at a time until golden on both sides, adding more butter to the pan as needed drain well and cool completely store at room temperature up to 4 hours place onto an ungreased baking sheet bake at 400 degrees for 8-10 minutes, until crisp serve hot
