Apple Oven Pancake

Ingredients:


2 tablespoons butter

2 medium tart green apples -- (such as granny smith), peeled, cored, chopped

1 tablespoons brown sugar

1 teaspoon ground cinnamon

3 large eggs -- separated

1/4 cup sugar

2/3 cup milk

1 cup all purpose flour

1 dash salt

2 tablespoons powdered sugar

2 tablespoons maple syrup
 

Preparation / Directions:


Preheat oven to 450 degrees. Melt 2 tablespoons butter in heavy medium skillet over medium-high heat. Add apples and saut‚ 5 minutes. Add brown sugar and cinnamon and saut‚ until apples are tender. Cool. Whisk egg yolks and sugar in medium bowl until well blended. Whisk in milk. Stir flour and salt in large bowl. Stir in milk mixture until just combined (batter will be lumpy). Using electric mixer, beat egg whites in large bowl until stiff but not dry. Gently fold whites into batter in three additions. Gently fold in apples. Melt remaining 2 tablespoons butter in heavy large ovenproof skillet over medium heat, swirling to coat bottom of pan completely. Pour batter into pan. Cook over medium heat 3 minutes. Transfer pan to oven and bake until tester inserted into center of pancake comes out clean, about 10 minutes. Sift powdered sugar over pancake. Cut into wedges. Serve with maple syrup.
