Onion Pie

Ingredients:


1 1/2 cups crushed saltine crackers

1/2 cup butter -- melted

3 1/2 cups sliced onions -- or whatever

1 cup milk -- scalded

3 large eggs -- slightly beaten

1 teaspoon salt

1 pound chedder cheese grated
 

Preparation / Directions:


In a bowl, combine crackers with 1/4 C melted butter. Press around bottom and sides of a 10-inch pie plate. Saute onions and remaining butter until tender. (I sometimes carmelize them) Add milk, eggs, salt and cheese. Pour mixture into prepared pie crust. Bake in a 300 oven for 50-60 minutes or until pie is golden.
