Oven-Roasted Mushrooms And New Potatoes

Ingredients:


1 1/2 Pounds new potatoes -- cut in 1/2-inch cubes

1/4 Cup olive oil

1 Pound fresh mushrooms -- mixed

1 Cup red bell papper -- cut in 1/2-inch

1 Teaspoon minced garlic

1/2 Cup sliced green onions

1 Teaspoon salt

1/2 Teaspoon thyme -- crushed

1/4 Teaspoon ground black pepper
 

Preparation / Directions:


Preheat oven to 450°F. In large baking pan, toss potatoes with oilive oil; bake uncovered, 10 minutes. Stir in mushrooms, red pepper and garlic; bake uncovered, until potatoes are nearly tender, about 15 minutes. Stir in green onions, salt, thyme and black pepper, bake until vegetables are tender, about 10 minutes longer.
