Mushroom Puffs

Ingredients:


3 tablespoons butter

1 pound fresh mushrooms -- cleaned and diced

1 small onion -- finely chopped

24 ounces cream cheese -- softened

2 large egg yolks

3 tablespoons minced parsley

1 teaspoon salt and pepper -- to taste

1 package party bread slices

1 teaspoon paprika -- to taste
 

Preparation / Directions:


In a medium size skillet melt butter and saute mushrooms and onion over medium heat until golden, stirring occasionally; drain. Heat broiler. In a medium size bowl beat cream cheese, egg yolks, parsley and seasonings together until smooth. Stir in mushroom mixture until combined. Spread evenly on party bread slices and sprinkle with paprika. Broil 1 to 2 minutes or until lightly browned and puffed. Serve immediately.
