Tutti-Frutti Muffins

Ingredients:


1 1/2 cups white flour

1 cup whole-wheat flour

2 teaspoons baking powder

1/2 teaspoon baking soda

2 large eggs -- beaten

1/4 cup sugar

1/2 cup unsweetened applesauce

1/2 cup evaporated skim milk

1 teaspoon vanilla

1/2 teaspoon orange extract

1 tablespoon canola oil

1/2 cup berries -- (try blueberries, strawberries, raspberries, or blackberries)
 

Preparation / Directions:


Preheat the oven to 350 degrees. Combine the flours, baking powder, and baking soda in a medium bowl. In a large bowl, combine the remaining ingredients except for the berries. Slowly add the dry ingredients to the large bowl and mix until blended. Do not overbeat. Fold in the berries. Pour the batter into 12 nonstick muffin cups and bake for 25 to 30 minutes until done. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely. 12 servings/Serving size: 1 muffin
