Sourdough Apple Muffins

Ingredients:


1 cup sourdough starter

1 1/4 cups unbleached white flour

1 cup water

3/4 cup whole wheat flour

1/3 cup powdered milk

1/2 cup brown sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 cup butter

1 large egg -- beaten

1/2 cup apple -- chopped, peeled

1/4 cup chopped nuts
 

Preparation / Directions:


1. Combine the first 3 ingredients in a large bowl, cover loosely and allow to stand in a warm place up to 24 hours, depending on how sour you want the muffins to taste. 2. When ready to bake, sift together all the dry ingredients into a second bowl and cut in the butter until the mixture resembles coarse meal. Add the egg to the starter mixture and stir it quickly into the dry mixture. Don not beat; stir only enough to mix everything. The batter will be lumpy. Fold in the chopped apple and nuts and pour the batter into well-greased muffin tins, filling each no more than 3/4 full. 3. Place the tins in a warm place and allow the muffins to rise for about 20 minutes, then bake in a preheated 400F oven for about 30 minutes. Do not underbake.
