Oatbran Muffins

Ingredients:


2 1/4 Cups oatbran

1 Tablespoon baking powder

1/4 Cup sugar

2 Tablespoons chopped almonds

---Combine these dry ingredients in a bowl.

---In a food processor ( or blender) add:

1 1/4 Cups milk

2 large egg whites

2 Large over ripe bananas
 

Preparation / Directions:


Blend all of these into a puree. With a spoon, mix the puree into the dry mixture. Now you can add a 1/2 cup of raisins or dried cranberries. Or you can fill your muffin tin with the mixture and add by hand fresh blueberries to each muffin cup. Bake on 450* for 15 minutes. Check your oven times as this is mountain elevation.
