Early-Morning Muffins

Ingredients:


3/4 cup low-sugar bran cereal -- flakes or nuggets

3/4 cup skim milk

1 large egg

1 large egg white

1 tablespoon canola oil

1/4 cup unsweetened applesauce

1 tablespoon honey

1 tablespoon brown sugar

1 cup quick-cooking oats

1/3 cup whole-wheat flour

1/3 cup white flour

1/2 cup currants or raisins

1 teaspoon vanilla

1 teaspoon cinnamon

2 teaspoons baking powder
 

Preparation / Directions:


Preheat the oven to 375 degrees. Combine all ingredients and mix until blended. Do not overbeat. Pour the batter into 12 nonstick muffin cups and bake for 20 to 25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely. 12 servings/Serving size: 1 muffin
