Banana Breakfast Muffins

Ingredients:


2 large mashed bananas

1/3 cup brown sugar

1 cup buttermilk

1 large egg

1 teaspoon vanilla

1 cup flour

1 cup whole-wheat flour

3/4 cup natural bran

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup nuts -- coarsely chopped
 

Preparation / Directions:


1. In med bowl, beat together first six (wet) ingredients. 2. In large bowl, stir together remaining ingredients. Add banana mixture and stir to moisten. 3. Spoon into 12 greased muffin cups and bake at 425F for 14 mins until tester comes clean.
