Apricot Muffins 2

Ingredients:


1 cup canned apricots -- well drained and finely chopped

1/2 cup butter

1 cup sugar

3/4 cup sour cream

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon grated orange peel -- optional

1/2 cup chopped nuts
 

Preparation / Directions:


Cream butter ans sugar until fluffy. Add sour cream and mix well. Sift dry ingredients and add to butter mixture. Mix only until combined. Fold in apricots, orange peel and nuts. Batter will be stiff. Spoon into well-greased muffin tins, filling each cup almost to the top. Bake at 400 degrees for 18 to 20 minutes or until done.
