Creole Liver

Ingredients:


4 slices bacon

1 medium onion -- chopped

1/4 Cup all purpose flour

1/8 teaspoon red pepper

1 pound thinly sliced beef liver

16 ounces can of whole tomatoes -- undrained and chopped

1/3 Cup chopped green pepper

1/2 teaspoon salt

1/2 teaspoon sugar

1/4 teaspoon chile powder
 

Preparation / Directions:


Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tbls. drippings in skillet. Crumble bacon, and set aside. Saute onion in drippings until tender; push to one side in skillet. Combine flour and red pepper. Dredge liver in flour mixture, and brown in bacon drippings. Add bacon and remaining ingredients; cover and simmer 40 to 45 minutes.
