COUSCOUS SOUP WITH SAUSAGE

Ingredients:


1 tablespoon Chopped jalapeno chilies

1 tablespoon Olive or vegetable oil

1/2 teaspoon Ground cumin

2 Clove Garlic -- crushed

1 pound fully cooked smoked salmon -- Cut crosswise into 1 piece

2 1/2 cups Water

1 can condensed -- Chicken broth (10-3/4 ounces)

1/2 cup Couscous

2 tablespoons Chopped fresh or

2 teaspoons Dried mint leaves

1/4 teaspoon Pepper

1 medium Tomato -- seeded and chopped
 

Preparation / Directions:


Cook chilies, oil, cumin, garlic and sausage in 3-quart saucepan over medium heat about 8 minutes or until sausage is brown; drain,Add water and chicken broth. Heat to boiling. Stir in couscous, mint and pepper; reduce heat. Cover and simmer 5 minutes. Stir in tomato. Serve with chopped parsley, finely chopped garlic and lemon juice if desired. To Microwave: Omit oil. Place chilies, cumin, garlic and sausage in 3-quart microwavable casserole. Cover tightly and microwave on high 2 minutes. Add water and chicken broth. Cover tightly and microwave on high 5 minutes. Stir in couscous, mint and pepper. Cover tightly and microwave on high 3 minutes. Stir in tomato. Let stand 5 minutes. Continue as directed.
