Dawn's Truffles

Ingredients:


2 tablespoons butter

2 tablespoons unsweetened butter

1 tablespoons heavy cream .4 g

1 tablespoons cocoa (baking, unsweetened) 3 g

1/4 cup full fat ricotta cheese 2 g

1/2 teaspoon vanilla .3g

3 packages sweetener or equivalent 2.7 g

1/2 teaspoon liquid sweetener

1 tablespoons sugar-free chocolate instant Jello pudding powder 5 g

1/4 cup coarsely chopped walnuts 3g
 

Preparation / Directions:


Melt butters and heat cream in small saucepan. Add cocoa and cheese and stir until creamy. Remove from heat. Let cool slightly. Add vanilla, sweeteners, and pudding, stirring until thoroughly mixed. Let cool until more firm. Scoop by rounded teaspoons onto chilled plate. Refrigerate one hour until firm. Variations: Roll in unsweetened coconut before refrigerating for a "snowball" look at Christmas. Add 1/4 cup unsweetened coconut. Use almonds, pecans, or macadamias.
