Artichoke Soup

Ingredients:


2 cans artichoke hearts

2 medium onions, chopped

1/4 cup olive oil

1/2 stick margarine

2 cloves garlic, chopped

2 tablespoons parsley, chopped

1 tablespoons Italian herbs

1 tablespoon lemon Juice

2 cans cream of chicken soup

1 can reduced fat chicken broth

3 cups water

1 Dash Tobasco

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Sauté onions and garlic in oil and margarine until soft, Drain artichoke hearts and cut in half. Add artichoke hearts to mixture and cook for 2 minutes stirring constantly, Add cream of chicken soup, chicken broth, parsley, Italian herbs, lemon juice, Tabasco and water, while each is added. Cover and simmer over low heat for one hour, stirring occasionally.
