Red Lentil sausage

Ingredients:


1 cup uncooked red lentils

1 cup fine bulgar (available in Turkish/Greek shops)

1 medium onion (finely chopped in food processor)

1 Tablespoon tomato puree

1/4 cup olive oil

1 Teaspoon salt

1 Teaspoon cumin

1 dash spicy red pepper

2 Tablespoons some finely chopped parsley

2 Tablespoons lemon juice
 

Preparation / Directions:


Rinse and soak the red lentils for 1 hour. Boil them in 2 cups of water until there is 1/2 a cup of water left in the pan. In the mean time, fry the finely chopped onion in the olive oil and add the puree, salt, cumin, red pepper in with the onion. When the water of the lentils is reduced to 1/2 a cup,turn the heat off, add the fine bulgar, the sauce and the chopped parsley. Stir the mixture and drizzle with a few drops of freshly squeezed lemon juice. Stir well, put the lid on and stand for 15-20 minutes for the flavours to soak. With your hands, pick out some of the mixture and shape them in sausages and lay them on a plate. They are eaten cool as a side dish.
