Spiced Lentil Casserole

Ingredients:


1/4 teaspoon crushed red chili flakes

1/2 teaspoon turmeric

1 dash asafetida (optional)

2 tablespoons canola oil

1 cup scallions sliced

1/2 cup chopped green bell pepper

3 cloves garlic -- minced

2 cups shredded green cabbage

2 cups cooked brown rice

3 cups cooked brown lentils

1 cup vegetable stock

1 cup frozen peas -- thawed
 

Preparation / Directions:


1. Preheat oven to 350 degrees F.

2. In a large skillet, saute chili, turmeric and asafetida in oil for 2 minutes.

3. Add scallions, bell pepper, garlic and cabbage and saute for 5 minutes.

4. Combine with rice, lentils, stock and peas in a baking dish and bake for 20 minutes. Serve warm.
