Parsonage-Style Lentils

Ingredients:


28 ounces tomatoes -- cut up

1 cup lentils

1/2 cup onion -- finely chopped

1/2 teaspoon curry powder

1/8 teaspoon ground mace

1 piece bay leaf

2 cups water

1 teaspoon salt

1/8 teaspoon pepper

1 cup rice
 

Preparation / Directions:


In heavy saucepan combine tomatoes, lentils, onion, curry powder, mace, bay leaf, water, salt and pepper. Bring to boiling. Simmer, covered, till lentils are tender about 40 minutes. Meanwhile cook rice according to package directions. Remove from heat; let stand, covered, for 10 minutes. To serve, spoon lentil mixture atop rice in bowls.
