Lentil And Canadian Bacon Soup

Ingredients:


4 cups water

1 teaspoon dried thyme -- leaves

1/2 teaspoon salt

1/4 teaspoon pepper

4 cups vegetable broth

1 cup carrots -- cut into 1/2 inch pieces

1 cup potatoes -- cut into 1/2 inch pieces

1/2 cup onion -- finely chopped

1/2 cup celery -- cut into 1/2 inch pieces

2 1/4 cups dried lentils -- sorted and rinsed

6 ounces canadian bacon -- coarsely chopped*
 

Preparation / Directions:


* or 1 1/2 cups leftover ham. Mix all ingredients in 3-1/2 to 4 quart Crock-Pot slow cooker. Cover and cook on low heat setting 8 to 9 hours or until lentils are tender. Stir well before servings. 8 Servings.
