Graziela's Lentil Soup

Ingredients:


2 medium carrots -- chopped

2 medium onions -- chopped

2 stalks celery -- chopped

1 pound italian sausage

3 tablespoons grated parmesan cheese

1 pound lentils

3 cloves minced garlic

1 teaspoon salt and pepper

1 can crushed tomatoes -- (16 oz)
 

Preparation / Directions:


Put lentils in a 4 quart saucepan. Wash thoroughly. Cover the lentils with about 4 inches of water and bring to a boil. Cook for approximately 1/2 an hour. Add all ingredients but the tomatoes, cheese and sausage. Remove the sausage from the casing. Brown the meat in a frying pan. Add the sausage to the lentils along with a spoon or two of the drippings. Cook for one hour. Add the tomatoes and cheese and cook for another half hour.
