Cream of Lentil Soup

Ingredients:


1 pound dried lentils

1 medium onion -- chopped

1 clove garlic -- minced

1 medium carrot -- chopped

1 stalk celery -- chopped

3 cups water

1 cup heavy cream

1 teaspoon salt

1 teaspoon pepper
 

Preparation / Directions:


Soak beans in 6 cups of water overnight; drain. Put beans, onion, garlic, carrot, celery, and water to Crockpot. Cover and cook on LOW setting for 8 to 10 hours. Stir in cream; add salt and pepper to taste.
