Armenian Lentil Soup

Ingredients:


1 Cup onion -- chopped

1/2 Cup carrots -- sliced

1/2 Cup celery -- sliced

3 Cup eggplant -- peeled, cubed

1 Cup green pepper -- diced

3 cloves garlic -- minced

6 Cup chicken stock

1 1/2 Cup lentils

1 1/2 Cup tomato -- chopped

4 ounces apricots,dried -- sliced

1/4 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon cayenne

1 tablespoons paprika

1 1/2 teaspoon salt

3 tablespoons parsley

1 tablespoons mint
 

Preparation / Directions:


Saute veggies in olive oil. Add the rest, except parsley and mint. Simmer until lentils are tender, Add the rest. Adjust seasonings to your taste.
