Lamb Shoulder With Apples

Ingredients:


5 Pounds presliced shourlder of lamb

2 Medium sized red apples -- cored and sliced

1/2 Cup firmly packed brown sugar

1/4 Cup lemon juice

1 Clove garlic minced

2 Teaspoons salt
 

Preparation / Directions:


Arrange lamb on rack in a shallow roasting pan. Insert some apple slices between slices of lamb, reserve remaining slices of apples. Combine remaining ingredients; blend together, pour some of the mixture over the lamb. Bake at 325 degrees for 30 minutes. Add reserved apple slices. Roast for 1 1/2 to 2 1/2 hours or until desired degree of doneness. Baste lamb and apples with sugar mixture during baking. Makes about 68 servings.
