Spicy Lamb And Vegetable Kebabs

Ingredients:


1 cup plain nonfat yogurt

1 tablespoons fresh lime juice

1 1/2 teaspoons ground cumin

2 cloves garlic -- minced

1/4 teaspoon cayenne pepper

1 1/2 pounds lamb leg meat -- cut into 16 large cubes

3 medium yellow squash cut into 12 1/2-inch thick

1 medium red bell pepper -- cut into 12 squares

1 medium red onion -- cut into 12 wedges

2 tablespoons pure olive oil
 

Preparation / Directions:


Combine yogurt, lime juice, cumin, garlic and cayenne in large bowl. Add lamb and toss to coat. Cover and refrigerate 1 hour. Prepare barbecue (medium-high heat). Alternate 4 lamb cubes, 3 squash pieces, 3 red pepper squares and 3 onion wedges on each of 4 metal skewers. Brush meat and vegetables with oil. Grill until meat is cooked to desired doneness, turning occasionally, about 10 minutes for medium rare. Transfer to platter and serve. Prep Time: 15 minutes Cook Time: 10 minutes Makes: 4 servings Prep Notes: 1hour Using lamb for kebabs is an interesting twist to the usual beef or chicken. Serve this with pasta salad or couscous for a great outdoor dinner.
