Mandarin Marmalade

Ingredients:


6 medium Mandarines

2 medium lemons

5 cups water

2 1/2 pounds Sugar
 

Preparation / Directions:


Wash fruit. Peel fruit and slice rind very finely. Cut fruit into small slices. Remove seeds. Put fruit into a bowl add water and cover, let stand overnight. Next day put into a saucepan. Bring to boil, reduce heat. Cover and simmer 40 mins. Put sugar into baking dish with lid, place in moderate oven for seven minutes. Add sugar to fruit mix, stir until dissolved. Bring to boil. Boil rapidly uncovered for 45/55 minutes. After 40 minutes, start testing jam to see if it is set. Spoon small amount onto cold saucer (put saucer in refrigerator when starting to make jam) push a spoon on to jam, if jam crinkles it is set. Remove saucepan from heat while testing jam. Skin any scum from top. Let cool slightly to allow fruit to settle. Pour into sterilized jars then seal.
