Acapulco Peach And Pepper Jam

Ingredients:


5 1/2 cups cider vinegar

1/4 cup fresh jalapenos -- quartered (and seeded desired)

3 pounds fresh peaches -- finely chopped

6 cups sugar

1 teaspoon celery seed

1 teaspoon whole allspice

4 drops green food coloring

6 Ounces liquid pectin
 

Preparation / Directions:


Combine vinegar and jalapeƱos in blender; process, pulsing on and off to desired fineness. Combine with peaches, sugar, celery seed and allspice in large kettle; bring to a boil. Reduce heat and simmer 45 to 50 minutes, stirring frequently. Let cool 2 minutes, then add food coloring and pectin. Ladle into hot sterilized jars. Seal and process in boiling-water bath 15 minutes. Start timing when water returns to a boil after filled jars are lowered into kettle. Remove from kettle and let cool.
