Ingredients:


2 cups lukewarm water

2 teaspoons salt

2 1/4 cups chickpea flour

1/4 cup extra-virgin olive oil -- plus

2 tablespoons extra-virgin olive oil

1 medium Onion and vegetable marmalade -- see * note

1 Cup fresh dried goat cheese
 

Preparation / Directions:


* Note: see the "Onion And Vegetable Marmalade" recipe which is included in this collection. Preheat oven to 425 degrees and preheat broiler. Place water and salt in a large wooden bowl. Whisking constantly, add checkpea flour until all is well blended. Stir in olive oil and let stand 30 minutes. Smear a 14-inch cast-iron skillet with 2 tablespoons oil and pour in batter. Place under broiler for 2 to 4 minutes, until lightly blistering. Remove and place in oven and bake 2 to 4 minutes until firm. Remove, cut into wedges.
