Ingredients:


1 small onion -- peeled chopped

4 tablespoons extra virgin -- olive oil

4 cloves garlic -- peeled minced

3 cups canned Italian tomatoes

10 bunch basil leaves -- julienned

2 tablespoons chopped Italian parsley

48 ounces cannellini beans undrained

5 cups water

1 teaspoon salt and pepper to taste

4 ounces tiny pasta shells
 

Preparation / Directions:


Sauté‚onion in olive oil until soft. Add garlic and sauté‚1 minute. Add tomatoes, basil and parsley. Cook over medium-high heat 5 minutes, stirring. Add beans with their liquid and the water. Cook over medium heat 15 minutes, until soup thickens. Add salt and pep p
