Gram's Marinated Mushrooms

Ingredients:


1 cup dry white wine -- or vermouth

1/2 cup vegetable oil

1/2 cup olive oil

3 tablespoons fresh lemon juice

3 large garlic cloves

2 teaspoons dried thyme

2 teaspoons sugar

1 1/2 teaspoons salt

1/2 teaspoon freshly ground pepper

2 pounds button mushrooms -- trimmed and

1/4 cup parsley -- minced
 

Preparation / Directions:


Put wine, oils, lemon juice, garlic, thyme, sugar, salt and pepper in saucepan; bring to a boil, reduce heat and simmer, covered, 10 minutes; add mushrooms and simmer 6 more minutes; stir in parsley and cool; put into sterilized jars, cover and refrigerate 4 hours before using; keep refrigerated! Yield: about 1 1/2 quarts.
