Spinach Croquettes

Ingredients:


4 bunches spinach leaves -- chopped and cooked in 2 tsp butter

3 medium potatoes - boiled and mashed

2 large eggs - -- (beaten)

1/4 teaspoon nutmeg

1 tablespoon cornflour

1 tablespoon breadcrumbs

1 teaspoon salt and pepper to taste

1 cup oil as required
 

Preparation / Directions:


Combine the mashed potato with nutmeg, salt and pepper. Cook on a low flame, stir in egg and mix well. Add the spinach leaves. Shape the mixture into croquettes. Roll them in cornflour, dip in the other egg, roll in bread crumbs and fry. Serve hot.
