Toasted Sandwich Indian Style!

Ingredients:


1 package bread -- as required

1/2 cup cubed potatoes -- (very small)

1/2 cup peas

1/2 cup sweetcorn

1 tablespoon lemon juice

1 medium green chillies -- (to 2), finely chopped

1 teaspoon ginger paste

1 medium chopped onion -- optional

2 teaspoons cumin seeds -- (jeera)

1 teaspoon salt -- to taste

1/2 teaspoon turmeric powder

1 tablespoons sugar -- if needed

1 tablespoon garam masala

2 tablespoons butter -- to fry

1 tablespoon oil
 

Preparation / Directions:


In a wok or heavy based saucepan heat the oil and when hot add the jeera seeds, wait till they pop and fry the onions, chillies and the ginger. Add the peas, potatoes, corn and salt, tumeric powder, cover and cook until tender. Then add the garam masala, lemon juice and sugar as required. Give it a good stir. Cool a little. Place the bread in the sandwich maker (I usually butter both sides not worrying about the cholesterol :)!), place the filling and cook. If you are having an open sandwich then you can either shallow fry the bread in butter or just toast it.
