Ingredients:


1/4 cup oil

1 large onion -- chopped

10 cloves garlic -- minced

2 medium fresh green chiles -- chopped

1 tablespoon turmeric

1 tablespoon ground cumin

3 pounds okra

1/2 teaspoon salt
 

Preparation / Directions:


Heat oil in large pot. Add onion, garlic and chiles. Fry over medium heat until browned. Stir in turmeric and cumin and fry for 2 minutes. Mix in okra and salt. Cover, reduce heat and simmer for 8 to 10 minutes, stirring occasionally to prevent burning. Serve hot with plain rice or chapatis.
