Cucumber Cool Down

Ingredients:


2 cups plain low-fat yogurt

1 cup finely chopped cucumber -- peeled if desired

2 tablespoons chopped fresh mint or parsley -- (or)

1 tablespoon dried mint or parsley
 

Preparation / Directions:


In a small mixing bowl, combine all of the ingredients. Cover and chill until ready to serve. NOTE: This is a comforting companion to almost any highly spiced dish. Spoon it over the top or serve it on the side.
