Batate Palya - Potato Curry with Lima Bean- Mangalore, India

Ingredients:


1 tablespoon vegetable oil

3 large onion -- chopped

4 cloves garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon cayenne

1/4 teaspoon freshly ground black pepper

1/2 teaspoon ground turmeric

6 large potatoes -- diced

4 large tomatoes -- sliced

1/2 cup water

2 cups frozen lima beans

1 teaspoon salt to taste

1/2 cup cilantro leaves -- for garnish
 

Preparation / Directions:


In skillet heat oil over medium heat for 1 minute, add onions and fry for about 1 minute. Add garlic and ginger and continue frying for 1 minute. Add ground spices, mix well and add potatoes and tomatoes along with water and cook covered for 12 minutes. Add lima beans, mix, and cook for 5 minutes. Just before serving add salt and garnish.
