Lemon Velvet Ice Cream

Ingredients:


3 large eggs -- beaten

3 cups sugar

5 medium lemons juiced

1 teaspoon grated rind of a lemon -- (optional)

2 cups whole milk

1 cup heavy whipping cream

2 cups evaporated milk
 

Preparation / Directions:


Beat eggs and sugar until creamy. Add remaining ingredients and mix thoroughly (add a couple of drops of yellow food coloring if desired). Mix and freeze. Makes 1/2 gallon. For double recipe, use only 2 cups of milk and double everything else.
