Crepe Suzette Ice Cream

Ingredients:


1 1/2 cups sugar

1 dash salt

4 large egg yolks

1 1/2 cups half and half

1 teaspoon orange rind grated

2 cups cream

1 ounce grand marnier

4 pieces crepes -- chopped in 1 inch squares
 

Preparation / Directions:


Combine sugar, salt, egg yolks, and orange rind. Whisk together until paste if formed. Heat half and half. While it is heating, place paste in a metal bowl and place over boiling water, whisk until warm. Stir warm half and half into paste and cook until thickened slightly or thinly coats back of spoon. Place over bowl of ice and whisk until cool. Add cream and Grand Marnier. Place into ice cream freezer and proceed as manufacture suggests. Add chopped crepes at the last moment.
