Preparation / Directions:
Make diagonal slits, 1/2 inch apart, halfway through the ham to where knife
touches bone. Place ham in a deep bowl (I use a huge stock pot) and barely
cover with water. Stir in sugar. Soak for at least two days in
Drain. Place ham in roasting dish lined with enough foil to wrap
Pour honey and orange juice all over ham. Insert cloves all over meat.
(Actually, I find it easier to reverse these two last steps but I am typing
the way it reads except for my own comments in parentheses). Wrap tightly
foil. Bake at 200 degrees for 6 to 7 hours or until done, unwrapping and
basting occasionally with honey mixture. Unwrap and bake at 450 degrees for
15 minutes for slightly crisp skin.
