Citrus Chile Negro Marinade

Ingredients:


2 1/2 cups fresh-squeezed orange juice

1 bottle red stripe beer

2 cups key lime juice

4 cups cilantro -- chopped

1/4 cup dark brown sugar

3 medium chile negro -- toasted lightly, stem and seeds removed, ground

20 cloves garlic

1/2 cup fresh oregano leaves -- minced

1/4 cup ground cumin

1/4 cup italian parsley

5 tablespoons kosher salt
 

Preparation / Directions:


Mix and use to cover meat. Marinate for at least 2 hours. Grill to desired degree of doneness.
