Barbecued Cobb Chicken Salad

Ingredients:


4 pieces barbecued chicken breasts -- sliced (breasts barbecued with)

1 medium New Mexico style barbecue sauce -- see * note

2 medium avocados coarsely chopped

2 medium tomatoes -- seeded, coarsely diced

6 ounces good quality blue cheese

6 ounces cayenne buttermilk dressing -- see * note

1 medium chopped romaine lettuce

1 teaspoon salt -- to taste

1 teaspoon freshly ground black pepper -- to taste
 

Preparation / Directions:


* Note: See the "New Mexico Style Barbecue Sauce" and "Cayenne Buttermilk Dressing" recipes which are included in this collection. Toss romaine lettuce in Cayenne Buttermilk Dressing, season with salt and freshly ground pepper. Top with chicken, avocado, tomatoes, and blue cheese.
