Lime Chicken Shish Kabob

Ingredients:


2 medium chicken breasts -- cut in cubes

2 medium limes -- juice of

20 milliliters garlic -- minced

1 tablespoon low sodium soy sauce

1 tablespoon apple juice concentrate

8 ounces medium mushrooms

1 medium red bell pepper -- cut in 1 inch cubes

16 small white pearl onions

1 medium green bell pepper -- cut in 1 inch pieces

2 small zucchini -- cubed
 

Preparation / Directions:


Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally. Alternate chicken and vegetables on skewers. Grill or broil about 10 minutes, turning and basting with marinade. Adapted from Cooking for Good Health by Gloria Rose
