Grilled Fish With Pineapple-Cilantro Sauce

Ingredients:


1 medium pineapple -- (about 2 lb) - peeled -- cored and

2 tablespoons cold water

2 tablespoons sugar

3/4 cup unsweetened pineapple juice

1 teaspoon salt

2 tablespoons lime juice

1 teaspoon pepper to taste

2 cloves garlic

6 fillets halibut, salmon or haddock -- steaks or fillets 6 oz

1/2 teaspoon jalapeno pepper -- to 1 tsp grilled

2 tablespoons minced cilantro

1 tablespoon cornstarch
 

Preparation / Directions:


Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling. Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stirring constantly, until thickened. Remove from heat; Cool 2-3 minutes. Stir in sugar; Season to taste with salt and pepper. Serve warm over Fish or Pork.
