Sweet Potato Slices

3 pounds sweet potatoes or yams
1/3 cup margarine or butter melted
1/2 teaspoon salt
1 bottle Marinara sauce warmed, if desired

Preparation / Directions:

1. Heat coals or gas grill. Peel sweet potatoes; cut into 1/2-inch diagonal slices. 2. Heat 1 inch water to boiling in 3-quart saucepan. Add sweet potatoes. Cover and heat to boiling; reduce heat to low. Simmer about 12 minutes or until almost tender; drain. Mix margarine and salt. 3. Grill sweet potato slices uncovered 4 inches from medium heat about 20 minutes, brushing frequently with margarine mixture and turning once, until tender. Serve sweet potatoes with marinara sauce.
